I've been playing for months and still don't know what mushrooms or nuts do,
The 🍄, 🌰 and 💎 are just collectables. They don't have any effect except that the score screen shows how many you collected and missed.
Chestnuts aren't explained, but the help page states you have to collect all mushrooms to be able to exit. EDIT: I was wrong, mushrooms are optional.
