Vegans! What are your best freezer friendly one pot recipes!

I've been making the same three bean chilli and lentil and chickpea dahl for years now and I'm trying to expand my repertoire for midweek meals.

I'm not an amazing cook so I like to make a big pot of something that I can freeze and eat over the course of a few weeks.

Looking forward to hearing your suggestions!

The Dahl

The three bean chilli recipe is easy AF:

Ingredients: 3x tins of different beans (I usually go for kidney, black beans and canneloni)

1x Tin sweetcorn

1 onion, chopped

2 Bell peppers, chopped

Jalapeños, chopped

Vegetable stock cube

Tin tomatoes

Cumin

Paprika

Hot chilli powder

Cayenne pepper

Salt & pepper

I throw the whole lot in a slow cooker. Then I fill one of the tins with water and throw that in too. Then leave on high for 4 hours.

I can't remember how much of the seasoning the original recipe said to put in. I measure that with my heart ♥

What was your favourite Black Mirror episode from the most recent series?

POSSIBLE SPOILERS FOR BLACK MIRROR SEASON SIX BELOW!

I'm a big fan of Black Mirror but I think I'm the odd one our when it comes to my favourites. My all time favourite out of all the seasons was Metalhead. I loved its Hitchcockesqueness.

I've decided on Mazey Day as my favourite episode of season 6. I love the theme of how being exploited (whether that's being paid a pittance in Starbucks, or being hounded by paparazzi) can turn people into monsters.

Are there any review writers among us?

I love writing and reading reviews. It started with film reviews. Reading Donald Clarke's scathing review movies in the Irish Times when I was younger was a formative experience. Often I find myself enjoying the critiques more than the movies! I've developed a soft spot for restaurant reviews as well.

During the pandemic I set up an Instagram page to start sharing food reviews, just for fun. They're not serious at all, I write them in a very tongue and cheek fashion and often try to incorporate what is happening in my own life in them. I love being honest about my own biases and having controversial takes about something as simple as ice cream flavour, I find it leads to some really fun discussions!

Who are your favourite critics? Do any of you here write reviews for fun or even for a living?

    I recommend looking up the STAR method for answering competency based questions (eg tell us about a time you worked with a difficult customer). The best thing is the stories don't even have to be true! As long as they sort of match up with your experience and follow the STAR method you'll go far.

    Also applying to jobs these days is a really long slog. Remember to take frequent breaks! And do not take any rejection personally. Easier said than done I know! Try to think of it as a numbers game. Your goal is to throw as many resumes as possible out into the ether. One of them is bound to boomerang back with a job offer.

  • Seconding the positive vibe of beehaw! I posted about a relationship quandary yesterday and the replies were so respectful. I've deleted online personal questions before because of how aggressive people have been, but here everyone was really kind, even when disagreeing. It actually cheered me up a lot. I'm very grateful for that.

    I do have an update for you all! When we woke up, I didn't want to talk about the phone situation so I just casually dropped burritos into a conversation earlier, waited a while, then asked them to be honest about where they had gone the night before. They came clean about the free burrito. From what I can gather, it sounded like a shameful stress induced feast that they didn't want to reveal to me. I've had similar issues in the past and boy do I empathise. I told them to either be more open in the future or at least get better at hiding it 🤣 my heart can't take any more secret burrito rendezvous.

    A genuine thanks for all the comments, there has been some really heartfelt advice here 🥰 I'm not saying either of us acted perfectly in this situation and it is nice to be able to talk about it anonymously with all you lovely people.

  • Yeah fuck thank you for commenting this because you're dead right about that last point. I felt possessed, I needed to know what was happening because I just knew they were lying. But going through their phone isn't a trustworthy way of verifying that.

    As I mentioned below, I am SO relieved that it was a burrito and nothing else. I just find the lying so weird.

    They're the one who complains about me ordering fast food too! Maybe that's why they hid it, so they wouldn't seem hypocritical??

    Tell me about your work life!

    I've been in and out of so many different jobs. Usually I get to a point where I burn out and just can't go in anymore. Best job I ever had was as a tour guide in a distillery telling people facts all day and working with what I now realise was a whole bunch of other neurodivergent people. Only left that because I wasn't paid enough to live. Honestly could have stayed there forever otherwise. Such is life!

    Currently in the middle of a career change after realising the whole 9-5 office job life isnt sustainable for me. I'm hoping to be able to work for myself soon and not be beholden to other people's schedules!

    What jobs have you tried out over the years? What has worked well for ye?
