  • Do you freeze your GF flours?
  • The only flour we refrigerate is the America's Test Kitchen blend. Other flours I like to keep inside of tupperware but we do store in our cabinet pantry. I'm sure it's great to refrigerate if you have the space.

  • If you have a computer background already then dive in! For a gaming rig try PopOS or Nobara.

    PopOS is Ubuntu based and used Gnome. They’re hard at work on a new custom DE that appears Gnome-like. PopOS is made by hardware company System76 to improve upon Ubuntu’s support of newer hardware they wish to sell.

    Nobara is Fedora based and recently switched to KDE Plasma which aligns with the Steam Deck. Nobara is specifically tweaked for gaming.

    Anyone else using this to bypass those pesky paywalls? It’s working great for me using the docker container.

    Who's the mod here? These post are very generic and won't help someone on a GF diet or new to one learn much of nothing.

    Welcome! You mention some good ideas for content. I look forward to your product reviews and FAQ write up for newbies. I hope this community grows to include active discussions and becomes a wealth of info.

    All of the existing posts are just fine though. Let’s not discourage anyone from posting and sharing in their own manner such as recipes. It would be great to see more high effort posts of any kind!

  • My experience has been that LibreOffice will not correctly render my .csv files when they are above a certain size. Not talking about big data here either like a few thousand rows. For this reason I use OnlyOffice instead.

  • Of course you can use a regular oven but the bread machine makes it so easy that we bake a loaf couple times a week. FYI bread machines do it all: dump and bake style. They knead the dough and such. The machine can also make pizza dough or dough for burger buns, dinner rolls, etc. to bake in the oven. In terms of GF baking it can be pretty tricky and the Zojirushi in particular has a GF setting that delivers great results. Great value for our family.

  • Our household recently picked up a Zojirushi bread machine. We must eat gluten free for medical reasons and GF bread from the supermarket is very expensive around $9 for a mini loaf of bread that crumbles and molds. We are finding it very cost effective to make our own breads.

  • What do you want to self host? To learn or experiment buy a cheap old x86 box. I get mine at goodwill auction. Otherwise desktop is good if you want something that needs more compute and that you’d spin up as needed vs always on.

    On April 26, 2023, the Food Labeling Modernization Act (FLMA) of 2023 (H.R. 2901 and S. 1289) was introduced in the 118th Congress by House Energy and Commerce Committee Chairman Frank Pallone, Jr. (D-NJ) and Senator Richard Blumenthal (D-CT). House Appropriations Committee Ranking Member Rosa DeLauro (D-CT), and Senators Sheldon Whitehouse (D-RI), Edward J. Markey (D-MA), Ben Cardin (D-MD), and Cory Booker (D-NJ) joined as original cosponsors of the legislation in their respective chambers. This legislation would update front-of-package food labeling requirements, require updates to the ingredients list on packaged foods, and apply consumer friendly labeling requirements, including the disclosure of gluten-containing grains.

    Certain food ingredients pose risks to people with medical conditions, including the more than three million Americans with celiac disease, a serious genetic autoimmune disease. It’s currently far too difficult to figure out whether and how much of these ingredients are present in foods. For those with celiac disease, ingesting gluten- a protein found in wheat, barely and rye sources- causes damage to the villi of the small intestine, leading to long-term health complications, including heart disease and cancers.

    Food labels can play an important role in managing diet-related diseases, yet federal labeling rules have not kept up with the changing marketplace, and current food labels do not provide the simple, straightforward information that celiac patients need to evaluate products and make healthy choices.

    Please join us in asking your Members of Congress to support the Food Labeling Modernization Act of 2023, to make it easier and safer for individuals with celiac disease or gluten sensitivity to purchase food items by disclosing if foods contain gluten.

    Odd Bagels

    I had these Odd bagels for the first time recently and was very impressed. Has anyone tried Odd bagels or know of a good GF bagel? These are really thick and doughy and have a good chewy bite. We ate the everything flavor.

    Debian 12 Bookworm on T61p

    I've been hearing good things about Debian 12 and it was easier than ever to install on this old T61p.

    Wanted to give Bookworm a test drive and happy to report it's smooth sailing using Gnome with a few tweaks from System76. Only took 8m 28s to compile pop launcher on the Core 2 Duo.

    Glowfari - Oakland Zoo
