What are your weird food rules?
  • As a line cook, cutting up everything before a pan gets turned on is just good mise en place. You shouldn't start cooking until you know you're ready and haven't forgotten anything. The whole process is way easier and more relaxed when you've got all the components together in advance

  • How did you all get into the culinary industry?
  • I personally fell in love with it after re-examining my life and what I wanted out of it after finishing cancer treatment. Even though it's my passion I absolutely don't want to stay in the kitchen past 35 or so. I don't want to be giving 70 hours of my life each week to work indefinitely and I don't think my body will be able to handle it much after that.

Basically what the title says, what made you choose the culinary/food service industry? Why is this what you chose to do?

    The American Dream zzz...
  • I went to school for a job that I worked 70 hrs a week at and still never got past $52k a year in the North Jersey/NY area. I just want to make enough to make ends meet and have a little leftover in savings, I don't even need it to be to the extent of the meme

How do you all unwind after a shitty day on the line?

This industry is brutal. I'm tearing my body apart for $16 an hour just continuously reminding myself that I'm learning a lot and this isn't forever, but man is it kicking my ass. What do you all do to unwind? Is booze/weed really all there is to help you chill out at the end of the day?

What's something you used to do/see/say but don't anymore because you don't feel it's right?
  • Definitely depends on the crowd nowadays. I personally see about a 50/50 split between smoking vs vaping among people in the restaurant industry, and those of us who don't do either are definitely the minority. Hopefully tabacco/nicotine products will stop being socially acceptable someday, but I can't imagine it's going to be any time soon with how popular vaping is.
