easiest is just to get a newer intel i3 with iGPU.
transcodes everything and is very fast at it as well with quicksync. and uses a low amount of power.

you could mount your media as read only :ro assuming you use a container
just copy over your profile backup that you certainly created beforehand
one main question should also be, do you want to selfhost or not.
because plex is not selfhosted imo due to their login servers.
you could use tailscale for that, it should be able to punch through the CGNAT

easiest fix is to correctly name the files for the first season. then you should be good to go
check your metadata and set the correct artist there. for every issue related to that it has always been shitty (extended) metadata. (with people often claiming "no but it's fine" until they take a real look at it and see that it's shit).
so give it a look and clean that up e.g. with mp3tag and/or musicbrainz picard and you will be good to go.

ratings won't work, as jellyfin uses the spotify model of likes.
Im general it's a good idea for the future to keep metadata in the files themselves, so they are agnostic from media managers.
I was the only reddit app I found that really worked with new comments.
what I mean with that is when you read a thread, then come back 5h later it would highlight all the new comments so you would not have to reread all the ones you already read the first time.
such a great feature (maybe others have it too, but from the many I tried non had it in that way)
