Juneteenth Dinner
In recognition of Juneteenth I cooked up a few things for dinner: Charleston Red Rice, (Instant Pot) Collard Greens, and Black Eyed Pea salad. Everything was so delicious!
Colombian recipe request
Hi Beehaw! Last week, I made an authentic gumbo with a painstaking dark roux and ate it while watching The Princess and the Frog with my girlfriend. I quite enjoyed cooking a meal that matched the movie and wanted to do a themed dinner again for our next movie, Encanto!
I haven't seen Encanto yet but I'm vaguely aware it's Colombian. Does anyone have suggestions for popular Colombian dishes? I am a hobbyist cook so long and intricate recipes aren't a turn off. I live in Southern California so I have lots of access to Mexican and international markets.

I'm almost always a lurker but I have abandoned Reddit on principal and come here. I've replaced the infinity app on my homescreen with Beehaw and It gives me my reddit fix. I'm more likely to comment here too, since It doesn't feel pointless due to the size of most subreddits. I've been leery of Reddit for a long time with ownership changes, the crap websites and apps, and their lack of reaction to toxic and hate riddled subs. This place is a welcome change.
Isometric Theme Park simulators. I'm in love with Parkitect and have fond memories playing Rollercoaster Tycoon 1 as a kid.
Hitman is one of my favorite stealth games in this way.

The /r/salsa subreddit has a wiki with a ton of salsa recipes made from all types of fruits and peppers as well. Truly remarkable variety. I need to back that up so I can fully abandon reddit lol
While I've learned most salsas are made with tomatillos (and frequently some type of dried pepper), I'm a product of my area so I love chips and salsa, which means table salsa! Tomato salsa makes the best dip, and the variations you can make with dried and whole peppers are endless! I really love the smokey character from canned chipotles and add them in a bit excess 😁
I don't think I've ever had smoked cream cheese, and now I really, really want some!
Unfortunately I haven't written down much so this is from memory!
8 tomatillos
1/4 white onion
1 jalapeño
Garlic clove
3 dried mulatto peppers, toasted and rehydrated
Cilantro
Juice of 1 lime
Salt to taste
4 tomatoes
1/4 onion
1 jalapeño
2 Chipotle peppers in adobo
3 dried guajillos peppers, toasted and rehydrated
1 or 2 cloves garlic
cilantro
juice of 1 lime
1/2 Tsp bullion (I use chicken better than bouillon)
This is really cool! I think showing how you've been able to achieve these results with non-mini paints would be really interesting to discover! I'm also always looking for tips and I need as much as I can get.
I have very slowly getting into mini painting. I was gifted a bunch of reaper paints and bought a few more to round out the color spectrum! I'm as artistic as a brick and have zero skill so I'm trying to approach it technically. I have too much going on so I haven't done much painting in a while but I keep coming back to it.
No, I haven't been able to grow much this year, I've been mostly growing herbs and small cherry tomatoes that I can fit on a patio. I just planted a moruga scorpion pepper plant that I'm definitely going to roast and put in some hot salsa when I can! 😁🔥

First post and I'm excited for this community! I want to share one of my very favorite things, Salsa! 😁
Salsa 1 is a tomatillo salsa with mulatto pepper. salsa 2 is a tomato salsa with Chipotle and guajillos peppers.
I constantly make variations based on what I feel like trying, inspired by, or craving!
