Ingredients:
-1 tablespoon of olive oil
-1 onion, chopped
-2 cloves of garlic, minced
-1 teaspoon of ground ginger
-4 cups of pumpkin puree
-4 cups of vegetable broth
-1/2 teaspoon of ground nutmeg
-1/2 teaspoon of ground cinnamon
-Salt and pepper to taste
Instructions:
Heat the olive oil in a large saucepan over medium heat.
Add the onion and garlic and sauté until the onion is tender, about 5 minutes.
Add the ground ginger and cook for another minute.
Stir in the pumpkin puree and vegetable broth and bring to a boil.
