...why not simply raise your prices to some level where you can afford to pay your employees? Pawning all the individual costs as separate line items on customer receipts will just run people off to better-managed restaurants.
If I go to a restaurant and have anything more than my food + a tip (which I can choose myself) + taxes show up on my bill, I'll happily dispute the bonus charges with a manager or my credit cards.
