Packet of vegan ramen + tofu and veggies. I like broccoli, shredded carrots, purple cabbage, bean sprouts, mushrooms...pretty much anything would be good. Sometimes I'll throw in a handful of peanuts or bean sprouts for some crunch. Also, you could add kimchi or sambal for more flavor. Still not healthy really, but it doesn't take much to elevate it quite a bit and it's real quick if you have the veggies prepped beforehand.
