What's the most modern SMS app available? It can be only on Github too as I use Obtanium. I'm hoping for something with rounded corners and a more Apple-esc appearance.

Try Textra. Many customization options, but in regards to advanced features, it's an SMS App, although it does have the ability to undo a delete after a few seconds
Unless I'm mistaken that's not a FOSS app and also contains many trackers. I'm not trying to be rude with this comment, I came to the F-Droid community to find FOSS apps that don't track their users.
Is there an app that shows if there are trackers in it?
Yes, I use App Manager. On APKs chose open as, app manager, scan. If the app is already installed you can also use the scanner option
The Exodus Privacy website does and it's feature is built into the Aurora store
I have this app, it just won't go past a certain letter on my phone, so only apps a to F show up.
But in theory, isn't there a way to remove the tracking scripts from the APK?
Try the website instead of the app then. Removing tracking scripts is above my knowledge level
Mine too. Lol. But is there an app / service that would scan APK's before you install?
Aurora Store does as long as the app has already been put on Exodus
